Did I just say “breakfast cookies”? Why yes, yes I did. Two words that sound so glorious together. Two words that would dunk so well in my Irish Breakfast Tea. My sister pinned a recipe for breakfast cookies and I knew right away that I would be giving that whole cookies-for-breakfast thing a try. For science. My mom and I threw these together one morning, and they were really quite perfect! The recipe seems pretty forgiving and adaptable to substitutions. In ours, we added some shredded coconut which was a nice touch. And look, no flour! No refined sugar! You could leave out chocolate chips if you wanted to (who would though?). They really do taste peanut-buttery-delicious, and you don’t have to feel guilty sneaking them out of the cookie jar in the morning. Not that guilt has ever stopped me before… I’m thinking these will be the perfect treat to have handy on Christmas morning!
